Blue cheeses are ideal for winter because they tend to be smoother and sweeter during this season, in part due to the chillier climate. Blues pair well with dried fruits, membrillo paste, figs and other sweet accompaniments that will mellow the poignant sharpness of the cheese. They also pair well with sweeter wines like Sauternes.

Here are a few suggestions to try at home on these cold nights:

Stilton is a strong earthy blue, usually made in spring and aged nine months to reach its prime just in time for winter. Try it paired with our Orino Honey with Walnuts in front of a cozy fireplace for the perfect winter night.

Point Reyes Blue is another great winter blue. Both vegetarian and certified kosher, this blue cheese serves up a mild and creamy texture that is both salty and sweet in flavor. Try it with red grapes and port wine, or serve it over a filet for a decadent winter meal.

To take advantage of winter veggies, try roasting vegetables like parsnips, potatoes, butternut squash, and Brussels sprouts- vegetables that all sweeten as they roast. Add a few tablespoons of Golden Greek olive oil and some quality balsamic vinegar before roasting to help the natural sugars in the vegetables caramelize in the oven. When the vegetables are done, sprinkle them with a mild blue cheese such as Papillion Gorgonzola and pop back in the oven for up to five minutes. Serve immediately and enjoy!
